Slow Cooked Lamb Shanks in Morg’s Pots

There’s nothing quite like the flavour you get from a slow-cooked meal on charcoal. These lamb shanks are rich, tender and full of comfort, with red wine and rosemary bringing it all together.
Cooked in the large Morg’s Pots saucepan over a gentle charcoal fire, this dish is perfect for camping, backyard cook-ups or even a lazy Sunday at home.
Ingredients
2 lamb shanks
3 medium potatoes, quartered
2 carrots, whole
1 medium onion, chopped
2 garlic cloves, crushed
1 chicken stock cube
A sprinkling of dried rosemary
1 cup red wine
Broccoli or other green veg
Method
Add all ingredients (except broccoli) to the large Morg’s Pot.
Pour in red wine and crumble in the chicken stock cube.
Place the pot over low charcoal heat and cover with lid.
Slow cook for 3 hours or more, checking occasionally and adding water if needed.
In the final 15 minutes, add broccoli & greens to the top of the pot to steam.
Serve with the rich wine sauce, natural yoghurt, a drizzle of balsamic vinegar and enjoy!
Tip: Serve with crusty bread or mashed potatoes to soak up that incredible sauce.
