Healthy low sugar delicious banana bread



Ingredients:

3 ripe bananas, mashed

1 cups self raising flour

1 tsp baking powder

1/2 tsp salt

1/2 cup butter, softened

3 desert spoons of maple syrup for sweetener

1 large egg

1 tsp vanilla extract

1/2 tsp cinnamon


A couple of options you can add

1/2 cup of sugar

1/2 cup of spiced rum soaked sultanas

1/2 cup chopped walnuts or chocolate chips

1/2 cup sour cream or yogurt


For the Charcoal Cooking:

A Morgs pot - can use a camp oven

Charcoal briquettes

A small rack or trivet (optional for lifting the pot off the base)


Prep the Charcoal:


Light your charcoal and allow it to heat until it's covered in a layer of white ash (about 20-30 minutes). You’ll want a mix of direct and indirect heat for a more even cooking experience. A weber style of bbq is good to use. Can be done on gas bbq as well.



Mix the wet Ingredients:


In a bowl, sift together the flour, baking powder, salt, and cinnamon. Set aside


Prepare the Wet Ingredients:


In a separate large bowl, mash bananas. Add the egg one, mixing after each addition. Stir in the vanilla extract, and butter until well combined.


Gradually add the dry ingredients into the wet mixture. Stir gently until just combined (be careful not to overmix). If you’re adding walnuts or chocolate chips, fold them in now.


Transfer to Morgs Pot:

We used the small saucepan for this cook


Pour the batter into the prepared Morgs pot, smoothing the top with a spatula


Cooking on Charcoal:


Place the pot on the rack or directly on the charcoal (be careful with the direct heat). Add additional charcoal around the pot, creating an even layer to ensure indirect heat surrounds the cake. You’ll want to have a bit of heat on top of the lid as well—placing a few coals on the lid will help cook the top.

Cook for about 45-60 minutes, depending on your heat and the size of your pot. Check for doneness by inserting a toothpick into the center of the cake—if it comes out clean, it's done.

Cool and Serve:


Once your banana bread cake is fully cooked, carefully remove the Morgs pot from the charcoal. Let it cool for about 10 minutes before transferring it to a wire rack to cool completely.
