Deliciously Moist Banana and Loaded Sultana Cake Recipe

Banana & Spiced Sultana Cake

A delicious blend of banana and spiced rum soaked saltanas making a delicious spicy tasty treat. See Video here

Ingredients:

  • 2 cups self-raising flour

  • 1/4 cup brown sugar

  • 3 tbsp maple syrup

  • 4 tbsp butter, melted

  • 2 eggs

  • 2 tsp vanilla extract

  • 1/2 cup milk

  • Mixed spice to taste

  • 1 cup mashed banana (about 2 medium bananas)

  • 3/4 cup soaked sultanas (soaked overnight in 50/50 spiced rum and water)

  • 2 tsp mixed spice


Method:

  1. Soak sultanas overnight in equal parts spiced rum and water (50/50 mix) or your choice of orange or apple juice. Drain before using.

  2. Preheat oven to 350°F (180°C).

  3. Mash the banana in a large bowl.

  4. Add eggs, milk, maple syrup, vanilla, and melted butter. Mix well.

  5. Stir in brown sugar, mixed spice, and self-raising flour until just combined.

  6. Fold through the soaked sultanas.

  7. Pour mixture into a lightly greased Morgs Pots small pan

  8. Bake for 30 minutes or until a skewer comes out clean.

  9. Allow to cool slightly before slicing.
