Perfect for a quick and tasty breakfast or brunch, this flatbread omelette combines the crispiness of seasoned flatbread with the creamy richness of eggs and cheese. You can make it on the go with your Morg's mini camp cooker or any stove you have at home!
Ingredients:
2 small flatbreads or 1 large flatbread
Butter and seasoning (to taste)
1 clove garlic, sliced
3 eggs (for one serve) or 4–5 eggs (for two serves)
Cottage cheese (a couple of tablespoons)
1 onion, sliced
Cheese of your choice (for topping)
Instructions:
Prepare the Flatbread: Roll the flatbread up and heat your Morg's pan on the mini camp cooker (or stove). Place the rolled flatbread on it. You can press it down with a weight to infuse the flavours of the seasoning and garlic. Cook until golden brown and crispy.
Slice and Spread: Once browned, slice the flatbread and spread it out in the pan, allowing it to crisp up further.
Mix the Omelette: In a bowl, crack the eggs (3 for a single serve, 4–5 for two serves). Add cottage cheese and season to taste. Mix until well combined.
Combine with Flatbread and Onion: Add the onion slices to the pan with the crispy flatbread. Pour the egg mixture over the top and let it cook for a few minutes.
Add Cheese and Finish Cooking: Sprinkle your favorite cheese on top and allow the omelette to cook until set. Once the cheese is melted and bubbly, your flatbread omelette is ready to serve!
